A mulled wine recipe to warm your heart

Hong Kong experiences its coldest days of the year down to about 0 C. 
Everybody tries to keep warm, especially as no one has built in heaters. So in order to help you stay warm, here a nice warming mulled wine recipe from Switzerland.
For this you need a big pot . The amount should be enough for four people on a cold evening .
  • 2 bottles of red wine
  • 150 grams of sugar (alternative: honey)
  • 2 cinnamon sticks
  • 2 cloves
  • 1 star anise
  • 3 Cardamon seeds
  • 4 slices of ginger, unpeeled
  • 1/2 - 1 table spoon vanilla sugar
  • 1 bay leaf
  • 2 strips lemon zest
Open red wine and pour into the pot . Add all spices into the pot . The spices can vary at will, depending on what you prefer . The sugar comes in at the end . Again, you can vary according to your taste.
Throughout  the cooking beware the mulled wine does not boil,  otherwise it will burn the spices.

​Let it warm up for 10 to 15 minutes , then strain it through a sieve and enjoy.
